There are tons of recipes online for microwave cakes and cakes in a cup, and here’s a spin on the classic with a delicate floral flavour. It goes fantastically with Lady Gray tea and takes just a couple of minutes to prepare.
- 1/2 beaten egg
- 6 desert spoons sugar 6 desert spoons plain flour
- 2 desert spoons butter
- pinch salt
- pinch baking powder
- few drops vanilla extract
- few drops almond flavouring
- sprinkling crushed violet candies
Beat all the ingredients together in a cereal bowl and microwave for two minutes. Check to see if the centre’s cooked and if not, cook for another thirty seconds. To serve, sprinkle with vanilla sugar, crushed violet candies and lemon juice.
