Recipe – Microwave Violet Cake | Bristol Foodie

“Hi, I’m Nikki and I love to cook, knit, crochet and drink overpriced cocktails with little umbrellas.  I did Junior Masterchef when I was 12 and my most prized possessions are my Le Creuset pans.  I’m starting my own business and I live in a little flat in St George.”

There are tons of recipes online for microwave cakes and cakes in a cup, and here’s a spin on the classic with a delicate floral flavour.  It goes fantastically with Lady Gray tea and takes just a couple of minutes to prepare.

Ingredients

  • 1/2 beaten egg
  • 6 desert spoons sugar 6 desert spoons plain flour
  • 2 desert spoons butter
  • pinch salt
  • pinch baking powder
  • few drops vanilla extract
  • few drops almond flavouring
  • sprinkling crushed violet candies

Beat all the ingredients together in a cereal bowl and microwave for two minutes. Check to see if the centre’s cooked and if not, cook for another thirty seconds. To serve, sprinkle with vanilla sugar, crushed violet candies and lemon juice.
