I stumbled across this recipe whilst having an “I don’t know what cook tonight” panic in the middle of Sainsbury’s. A real gem of a recipe, I can’t wait to cook it again. We ate it with potato rosti however for a lighter dish you could just have more salad and miss the potatoes altogether.

Ingredients
| For the potato rosti 650g new potatoes 2 apples, peeled & grated zest of 1 lemon 1 egg, beaten 1 tbsp plain flour 2 tbsp olive oil |
For the salad juice of 1 lemon 250g smoked mackerel 75g feta cheese 30g pine nuts 75g watercress, rocket or spinach |
Method – potato rosti
1) Put your oven on 200°C.
2) Boil the potatoes for 10-15 minutes. Drain and chill in cold water until cool enough to handle.
3) Grate the potatoes, apples and lemon zest into a bowl then mix with the egg, flour, salt and pepper.
4) Mix well then shape into small potato cakes. Fry your potato rosti in the oil in a frying pan for 3 mins on each side then place on a baking tray and finish off in the oven for 10 minutes should be golden and crispy on the outside.
Method – salad
So easy it’s unreal.
1) Crumble the feta cheese and grill, skin and flake your mackerel. Set aside.
2) Toast the pine nuts in a dry pan, they should be golden but be careful not to burn them.
3) Mix together the mackerel, cheese, pine nuts, leaves and the lemon juice. Make sure it’s tossed well
4) And serve!
