Katie’s Chilli Lasagne

This is dish given to me by a fellow foodie, my good friend Katie and is one of my favourites. It’s a great dish for when you have several people coming over and are cooking for larger numbers


  • Chilli Con Carne Mixture (as hot as you like it)
  • Cheese Sauce
  • Tortilla Chips
  • Lasagne

Chilli Con Carne

There are lots of recipes for this and various ways of doing this, I generally follow one from a 30 Minute Readers Digest Cookery Book, but other recipes work just as well (I’ve found that Chilli Con Carne is a dish that everyone has their own recipe and way of cooking it) When Katie makes this, she adds a pinch if cinnamon into the mix for an extra twist!

Cheese Sauce
Cheese sauce out of a packet is a BIG foodie No-No. My mega easy recipe for Cheese Sauce is below. You will need to use double quantity for Chilli Lasagne so just double the amounts.

  • 1 Mug Grated Cheese (the finer the better)
  • 1 Teaspoon Butter
  • Pinch of Salt and Pepper (and Paprika if you like)
  • 1 table spoons of Plain Flour
  • 1 Mug of Milk
  • Cheese into a pan, add flour, Salt, Pepper and Paprika and mix well
    Add Milk and Butter and bring to the boil, stirring continuously
    The sauce should thicken, and thn its ready!


    Once you have your chilli and cheese sauce ready you can start to layer the lasagne as you would normally. Chilli, Lasagne strip, Cheese Sauce, Lasagne strip, Chilli (and so on and so forth)

    Finish with a layer of Cheese Sauce, then add a layer of Tortilla Chips or Nachos and grated cheese to top.

    Servng Suggestions:
    Garlic Bread, lots of Wine and Good Friends!

      eek on the embarassing dinner disaster, although it happens to all of us – certainly to me countless numbers of times always when the inlaws are coming over…

      I love the sound of this recipe but was wondering what you thought about replacing the lasagne sheets with something else? Like corn tortillas or similar??

        I’ve seen a couple of recipes which recommend tortillas instead of lasagne sheets, an excellent one in a student cookbook, Nosh 4 Students

        Yet to try them but imagine it would be a great alternative, have you tried this? If you have then let us know how you get on (and send pics!!)
