10 Salads to get you through summer – Japanese cucumber salad

Salad number two is a refreshing and zingy Japanese cucumber salad which goes brilliantly with Thai or Japanese food. I love the fragrance of Thai food in summer – a great match.

Ingredients:

For the salad:
3 small cucumbers
Fresh mint
Fresh coriander
For the dressing:
6 tbsp olive oil, 1 stick lemongrass
3 tbsp rice wine vinegar, Dash of soy sauce
1 tsp sugar, 2” grated ginger, Salt, Pepper,

Method:
1. Dressing: peel & grate the ginger, remove the outer leaves of the lemongrass and finely chop the inner leaves
2. Dressing: mix all of the ingredients together in a bowl and season to taste
3. Salad: Take a potato peeler / mandolin to the cucumbers lengthways – you want very thin slices of cucumber.
4. Salad: Place strips onto a plate, rip up the fresh mint and coriander (cilantro) and sprinkle over the cucumber, then drizzle the salad with the dressing and serve.
